Penne with Sausage, Eggplant & Feta

Another veggie I haven't cooked with before - eggplant! Thanks veggie box!

The only thing different was use turkey sausage (healthier than pork) and Dreamfields carb friendly Penne. I'm not sure I totally buy into the hype of dreamfields. It has mixed reviews. But whatever. It can't hurt - I treat it as cautiously as regular pasta.

Start with 1 eggplant (and two hungry puppies in the background)
 The finished product before garnishing with the feta. Oh it looks good.
So pretty. And yummy. The feta is a great touch.

I love this recipe. Definitely a keeper. I'm going to go freeze the leftovers now.
